Unagi (Broiled Freshwater Eel) Nigiri Sushi

Unagi is freshwater eel.  It is broiled and then steamed to make the meat fluffy, after which it is grilled again on an open flame and basted often with eel sauce.  The eel sauce is made with the eel trimmings, soy sauce, sugar, and sake.

This is a great tasting sushi in either nigiri style or make style. Yum...
