This slice of fresh skinless squid has a diferent chewing consistency that other sushi. If done right, it is soft and supple and not chewy. It has a very delicate flavor of the sea and is a nice compliment to many other kinds of sushi. The top of the squid is scored so that the squid lays properly around the top of the rice.
Though some people prefer the tentacles, which are poached, the normal squid sushi uses the hood of the squid.
