Hotate is scallop. It is another piece of sushi from which you would expect a very oceany taste. The part of the scallop that is used for sushi is the muscle that connects the organs to the shell. It is prepared by soaking it in salt water and seawater to clean out the sand and then cut in half, flattened, and placed on top of the rice.
It has a firm, non-chewy bite and a very subtle ocean flavor. Definitely for all levels of sushi eaters from notice to total sushi lover.
