Anago is not raw sushi. Anago sushi is made from saltwater eel that has been broiled (most of the time). So it is cooked eel. They make it in maki-sushi style or handroll style with a sweet sauce brushed across the top.
The sweet sauce is normally made from a reduction of the eel sauce that is produced while it is cooking mixed with soy sauce, rice wine, and sugar. A truly tasty flavor and once you have tasted it, you will keep coming back to this sushi.
